Sunday supper kept to the use it up meal plan for the month: I culled TWO open bags (odd for me) out of the pantry, we are now out, but that's ok; one of my 2 remaining Butternut squash was first oven roasted in the mini convection oven, then mashed with butter, salt, pepper, brown sugar, Penzey's baking spice-yummmy!; 2 cans of no salt beets, a jar of apple sauce, a jar of sliced mushrooms, 1/2 of an onion was used and 2 sprigs of celery.
2, 3 count pkgs of marked down pork chops out of the freezer
All of the stock made from pan dripping left behind from oven roasting 2 chicken leg quarters earlier in the week, the fat used instead of butter to fry off the onions, celery and mushrooms; some of the stock in the large Pyrex was also used for the stuffing.
Stuffing topped, pork chop bake with mashed squash and beets. Perfect!
