Trying something new: Tofu scramble

DD asked me to make this for her this morning: a Mexican spiced, Tofu scramble. She really liked it, found it quite filling so we have an extra day's worth for tomorrow. Anyone else use scrambled Tofu for a protein at breakfast?

Carol, I've used tofu a lot, for protein, just not as a breakfast thing. I use it mashed, and seasoned with garlic, salt and lemon juice as a replacement for ricotta cheese in lasagna and stuffed shells. It doesn't melt, but I like it in pasta dishes, and gives me something I can eat with the family. (I don't eat much dairy.) The scramble sounds tasty.
