What's for dinner: Shepardess pie

 Pictured is a small, intended for 2 but must feed 3 tonight, Shepardess pie that has been lurking in my freezer. Here's the recipe I use:
 Knowing that I have to stretch this, I decided upon making another, although smaller, batch of sauteed cabbage; it really went over well earlier this week.
Canned beets will accompany.

2 slices of homemade apple pie await dessert seekers.

It was just me tonight. I cooked some kale and made potato salad (enough to have leftovers tomorrow).
