Taco Thursday

 A quick and simple, bean based dinner tonight:

ground chicken from the freezer will be used to create chicken-black bean tacos. Corn on the side, along with a tossed salad with choice of dressing.

I've been up since 5:30, already got the organic black beans on for a quick soak, then will simmer them until soft. The extra will be frozen in 2 cup increments for quick meals in the future.
