Fish on Monday: tuna cakes

3 cans of chunk tuna, 1 egg, 1/2 of a grated zucchini, about 1 cup homemade bread crumbs, minced onion, fresh dill, black pepper became our tuna cakes this week. A fresh batch of tartar suace was mixed up, using home canned, picalilli. Cakes were served on potato rolls.
 a bag of onion rings from Aldis were baked off in the table top convection oven to save electric as well as keep from generating a lot of heat in the kitchen
 The rest of the zuke, 1/2 of a Summer squash, the tops  of one onion, one med. red-green pepper were sauteed in bacon fat, seasned with salt, pepper, Italian spices
 I am makig 2 gallons of tea daily, adding lemon blam to this batch. The heat and humidity are oppressive.
Stopped in to my impromptu farm stand: wax beans all cost me $3 total.

Tuna cakes with your veggies layered on them would be a gourmet feast for me.
