A nice problem

I have an overabundance of fresh, mostly organic fruit: blueberries, raspberries, red & black currents. I am looking for ideas. It is wonderfully cool in CT, so baking is on my to do list, suggestions welcomed!

The Pioneer Woman has a simple and delicious blackberry cobbler on her site. I use blueberries because that is what I have. Any of those fruits in the picture will work and not many ingredients. I am on my kindle so I can't link, sorry. Cheryl

Hi CT! I'd say freeze half of everything since that is the easiest. Plus I love to make smoothies year round and sometimes I'll just make slushies (frozen fruit + water) in the summer time (very refreshing and healthy). But I absolutely LOVE home made muffins with REAL blueberries. Geez haven't made those in a long time but when the blueberry pops in your mouth so yummy. With real fruit I think you can use half the recommended sugar since it will naturally be sweeter. ~ Pru

I'm a big fan of muffins with mixed berries...or a mixed berry bread...or gently mash the berries with a bit of sugar, use to top everything especially short cakes...last 2 days in the fridge

been meaning to ask...have you always been this organized and goal oriented or is it something newish...I'm trying to acquire these habits after a lifetime of living without a "plan"

If you still have cold cereal, that's how I would eat them. My husband has blueberries on his cereal year round as long as I can get them in a bigger than 6 oz. carton. I draw the line at the price when they get that scarce. They are just available fresh here now. The grocery store has had them on special a lot lately, so he has had a lot. I prefer red raspberries or strawberries. Raspberries are in season here now also. I would probably say shortcake or cobbler would be my next choice. The strawberry season was so short here I only got 4 quarts and no shortcakes or pies. Gone before we knew it due to heavy rains. I don't mind them in muffins or scones, either!!

I love crisps myself. We have an abundance of blackberries right now - need to get out and pick them as they are on every road and free!
