Leftover Wed

Dinner for one, but not too shabby! Leftover/planned over meatloaf, 1 1/2 boiled Yukon gold potatoes, some l/o corn, some l/o peas/carrots/pearl onions in cream sauce. This worked very nicely!

Yukon Gold potatoes are my favorite. I love how they cook up and easily mashed with a fork. Good tasting as well. :)
