Fish on Monday

Baked in the tabletop/convection oven fzn Cod fillets topped with fresh lemon and some Penzey's seasoning, steamed squash and green beans, a quick coleslaw using the rest of last week's Nappa cabbage and some bottled, Aldi's coleslaw dressing.There was a lb of fish but it seemed to really shrink!  A very busy day running around, so I really appreciated a quick to the table meal.

A pound of fish certainly does shrink. It takes a pound of fish to feed 3 of us.

I picked up a tip about frozen fish from a chef/parent who helped out at the fish fry this year. Before cooking make sure the fish is completely defrosted. This will cut back on the shrinkage. Also take it out of the oven about 2-3 minutes before it is totally done, cover, and let finish 'cooking'. Also helps with the shrinking and makes sure the fish is not overdone and dry!

Nanc, thanks for the tips. Fish was defrosted, so must have been an overcooking issue
