Fish and CORN Monday

 A slight tweaking of the menu: the fridge simply had too many leftovers
 Dinner for 3 tonight, and enough salad to go around, perfect
 1 lb pkg of fzn Haddock was defrosted, leftover wedges of lemon gave their last bits up, and I sprinkled Fox Point on top, covered the pan with a repurposed sheet of foil, and baked these off in the convection, table top oven. I reheated the rest of the leftovers, giving the pasta noodles to my sons (I don't need the calories)
and I had extra veggies (I created my own version of mixed veggies). Here's MY supper plate, minus the noodles, which I passed on.
