Mother's Day dinner

Keeping Mother's Day dinner simple tonight: BSCB are defrosting and marinating in some Aldi's Italian dressing. I only use 1 cup (8 oz), so a bottle lasts at least thru 2 grilling sessions. This chicken will be grilled outside, and served over a large, tossed salad with choice of dressing. Steamed, organic asparagus will round out the evening meal. Dessert will be fresh berries (strawberries and raspberries) over ice cream/sorbet.

The kids have limited resources, and there is no way I'd go to a restaurant on a holiday; having waitressed those holidays, I am very familiar with the decrease in service but increase in costs charged on those days. Best to stay at home. : )

Happy Mother's Day!
