Mom's potato salad recipe






Mom's potato salad



In a large bowl, whisk together: 1/2 cup mayo, 2 tsp spicy mustard, salt and pepper to taste, 1 Tbsp cider vinegar.


Fold in 8 potatoes, cooked and cut up; 4 hard boiled eggs, slices; 2 scallions, chopped.


Fold togther. Sprinkle with Paprika and snipped chive. Refrigerate several hours before serving.


Saturday supper menu

planned over meatloaf in sandwiches on choice of white, honey wheat or 12 grain bread
Mom's egg-potato salad (recipe above)
steamed Summer squash with fresh dill

Your mom's potato salad recipe looks and sounds delicious! Mine is similar, but without onions and uses regular mustard and sweet pickle relish in lieu of acv. I'll have to try yours next time I make potato salad!
