Got grapefruit ideas?

We still have a ton of grapefruit on hand, so I am looking for ideas to use them up, before they go bad. Besides eating as is, and perhaps adding to a fruit cup (I am limited to: fresh apples and bananas, fzn blueberries, canned pineapple, pears, peaches), do you have any other ideas especially TNT recipes? I am thinking a Winter salad, perhaps a baked good? All suggestions appreciated!

Jam or juice it . You can freeze segments too.

How about a warm duck or chicken salad with grapefruit, similar to duck a la orange? Wonder if you can poach them in a little syrup with a cinnamon stick or red wine with some yoghurt or honey on top? Good luck. X

One of my favorite winter salads is a simple grapefruit and avocado salad (segments of grapefruit arranged with slices of avocado), topped with a dijon-orange vinaigrette or a raspberry vinaigrette. But you may not have avocado right now. (I also do this salad with oranges, if that's the citrus that I have.)

Lili, thanks for the suggestion. You are right, I don't have avocados, but I normally wouldn't as I don't care for them (texture issue). What could I substitute? I do have some raspberry vinaigrette (bottled) and could mix my own dijon-orange vinaigrette.

Carol, you could try this simply with grapefruit segments, over a small bed of leafy greens, on individual plates, then drizzled with the vinaigrette. About 4 grapefruit segments per small bed of lettuce or fresh spinach.

I'm glad you asked this question, as it spurred me to make orange and avocado salads last night. I made a quick mustard vinaigrette to go over ours.
