Vegetarian Thursday

AKA-fridge produce drawer clean out! Tonight fare: vegetable stir fry with oodon noodles (bought on sale + coupon). I used a blend of Canola and sesame seed oil, then stir fried the following:

-the rest of a Savoy cabbage (purchased with GC so free), slivered
-organic carrots, cut on the bias
-4 stalks celery, cut
-one red pepper, slivered and then cut in half
-a lb of asparagus,c chopped
-one large onion, sliced
-some pea shoots
-a large pkg of organic baby spinach

Seasoned with some low salt soy sauce (Aldi's), this was dinner. Have enough leftover for my lunch tomorrow. Perfect.
