Memorial Day weekend cooking on a limited budget
Memorial Day weekend for us, has traditionally been a weekend long, continuous picnic/BBQ. Steaks, burgers, sausages, salads, beans, and some sort of patriotic themed dessert. Current circumstances require that I significantly limit spending on groceries, so this will naturally alter our menus this year.
Tonight's (Sunday) menu:
-grilled beef kielbasa (Aldi's-bought on sale @ Easter), assorted mustards to select from
-home made Italian pasta salad (sale priced mini farfalle, 1 branch celery (Aldi's)chopped, 1 purple scallion sliced (CSA), the tops of a red and a yellow pepper diced (Aldi's), some fresh oregano chopped (CSA), some bottled creamy Italian dressing (sale plus cpn), black pepper
Tomorrow (Actual Memorial Day) menu:
-homemade Crock Pot baked beans
-grilled beef hot dogs (Aldis) on buns (Aldi's) choice of assorted condiments (many home made and canned)
-homemade cole slaw
Dessert idea: simple sugar cookies cut out into stars, decorated with red/white/blue jimmies.
Beverages: sale priced soda, home brewed green tea, generic "koolaid" made with less sugar, iced water.
Keeping it simple, on a budget this year. It's more important to have my kids with me, than to be eating steaks anyway. : )
