Fish on Monday: keeping things simple

Horseradish encrusted Tilapia, brown rice, steamed fresh carrots with frozen peas. Simple, good cooking that was quick to get on the table.

That is almost exactly what we had for Sunday dinner! Substitute green salad for the rice and the tilapia was steamed in Italian tomatoes. Love carrots and peas together.
