Here's the family favorite squash recipe, it's EXCELLENT:
Baked acorn squash slices
Great meals on a tight budget
Family Circle cookbook, circa1984
1 acorn squash, approx 2 lbs in weight
1/2 cup orange juice
1/4 cup firmly packed brown sugar
3 Tbsp melted butter/margarine
1 tsp salt
Preheat oven to 400
Cut squash into 3/4 inch thick rings, cutting through the squash crosswise. Remove seeds Arrange sliced in a shallow baking dish (I used a 13 x 9 x 2 glass dish)
Combine remaining ingredients and pour evenly over squash slices.
Bake for 50 minutes or until tender.
*I was using the oven for baking brownies so tonight, I tried this at 350, and it came out just fine in the usual time frame required.
