The inspiration for tonight's leftover meal: a quart of home made chicken stock, a pint container of cooked chicken breast, organic CSA cabbage, organic CSA parsley, a bit of leftover carrot and broccoli, 2 additional fresh carrots. Let's make soup! Kids and I are home tomorrow from school, so we'll have it again for lunch.
I removed the hardened chicken fat and used that to saute the fresh carrot
I dug out a can of 25 cents on marked down, Aldi's Italian style diced tomaotes, a bag of frozen, organic CSA New Zealand spinach
I chopped the chicken meat, quite a bit there!
Chopped an organic CSA onion, sauteed that off with the carrot, before dumping all of the rest of the ingredients into the pot, along with ample water. Decided to move to a larger pot.
Waiting for this to simmer a bit before adding the starch:
 Decided upon large, shell pasta
Added spices: Mrs Dash table blend, black pepper, seasoned salt, chicken bouillon
Here's the finished soup. Option of freshly grated Parmesan on top. It came out delicious. : )
