Zucchini wheat bread




Not your typical tea loaf, I am trying something new, using my ABM:

From Better Homes and gardens biggest book of bread machine recipes, 2003:
Zucchini wheat bread

1 cup milk
1 1/2 cups shredded zucchini
2 Tbsp shortening
2 2/3 cup whole wheat flour (used the rest of what I had, topped up with additional, plain bread flour)
1 1/3 cup bread flour
2 Tbsp gluten flour
4 tsp brown sugar
2 tsp finely shredded lemon peel
1 tsp salt
2 tsp yeast

Place ingredients into 2 lb loaf machine in order listed. Select basic cycle.

OK, this zuke based bread ALSO exploded, much like zucchini in the garden! What nibbles we've picked off, we like, so we'll try these in sandwiches,as well as for toast in the morning. Love that it contains zucchini, but you'd never know it! Very soft texture, too.
