Today's baking inspiration: pantry cooking

Yesterday's butternut squash-date-spice muffins were a real hit! So more baking is on my to do list today. My inspiration: one of 4, 29 oz cans of crash n burn pumpkin lurking in my pantry. I am thinking of making a batch of my pumpkin bread (makes 2 loaves), and a batch of pumpkin-chocolate chip-spice muffins.

Precious, I am on a mission to eat down what we have for many reasons:
1- in case we do decide to move, it's less to haul around
2-to rotate stock
3-to reduce July and August grocery expenditure
4-to stay away from the stores. Less temptation. Need a bfst food? instead of buying cold cereal, for example, I am forcing myself (not that I truly mind as I am a cook)to get creative with what I've already got. : )

Pumpkin bread sounds great...so do muffins...recently moved in with my mother because of her dementia...our combined stock of food needs some thinning out...this will be a good project for us...
