Sunday breakfast

Using my CSA this morning: Kale & apple-chicken sausage Impossible pie "quiche" using up the last of a bit of Cheddar, eggs, instant milk, homemade "bisquick", tarragon, black pepper, onion.

Yum!

Impossible Broccoli Pie

1 pound broccoli, cooked
1/2 cup chopped onion 1 cup shredded Havarti with dill cheese
1 1/2 cups milk (I use reconstituted instant milk)
3 eggs
3/4 cup Bisquick
1/4 teaspoon pepper
1/2 teaspoon salt

Pam spray a quiche pan.(*or use Pam sprayed muffin tins for mini quiches-I often do that for parties, brunch, church functions)

Cook broccoli until tender; drain.

Mix remaining ingredients. Blend until smooth before adding vegetables. Bake until golden brown, 30 to 35 minutes at 375 degrees F.


Today's version had me parboil then brown a pkg of apple-chicken sausages. Once cooked, I penny sliced 2 of the sausages, set them aside. Meanwhile, I used the same frying pan to saute the Kale that I chiffonaded first. Once cooked, I Pam sprayed the quiche pan, added the onion, the kale, the sliced sausage. I topped this with shredded Cheddar. I made up my batter (I usually skip the extra salt), adding tarragon for additional flavor. Poured the batter over the top and baked it off. Only one piece left, it was GOOD!
