Baking in the cool of the evening

 Circumstances require that we use up what is on hand so there will be a lot of fzn shredded zuke recipes in the next few months. Tonight,I am back to back baking, making the most use of my electric oven. It is supposed to get quite hot and humid the next few days, so capitalizing on the cool of the evening makes sense. We do not have A/C except for the bedrooms. Tonight's baking selections: 2 loaves of chocolate zucchini bread (minus the nuts as 2 kids will be having wisdom teeth out this upcoming week).
I also baked off a batch (makes 24) of chocolate zucchini muffins.
