April 2013 menus

Working on financials, including upcoming grocery expenditure for April. April menus are now planned. I am noting that I haven't been making soups on Saturdays, instead gravitating to leftovers. With college boy at work, or the twins at visitation with Dad, this has been a change. I really need to cook 4 days/week for 3 weeks out of the month, and 6 days the other week so 18 meals. 

Here are my April menus:
1-tuna-shell macaroni casserole, salad
2-spaghetti and fzn meatballs in homemade marinara (use Crock pot), salad, green beans

4-CP meatloaf (use fzn meatloaf mix, cornflake crumbs, fzn celery, scallions, green peppers), mashed potato, beets

6-corn-clam chowder, saltines
7-beef stew(use fzn meat cubes)
8-ginger glazed baked salmon filets (use fzn), rice, kale (fzn), carrots
9-chicken parm (use fzn breaded cutlets) in homemade marinara over spaghetti, salad
10-l/o
11-CP beef (use fzn)-pinto bean (reconsitute dried the night before)-use qt home canned tomatoes chilli; homemade Southern style corn bread

14-apple chicken sausage-kale (both fzn) quiche, salad, green-wax-kidney bean salad
15-hornseradish encrusted Tilapia (fzn fish) green bean saute, rice
16-beef (fzn)-bean (cook night before) tacos on tortillas, Mexicorn

18-kielbasa (fzn), pork beans (fzn), coleslaw
19-homemade pizza night, salad
20-Tuscan lentil soup
21*-roast chicken (fzn), homemade stuffing (use fzn bread ends), butternut squash (fzn), Chard (fzn)
22*-beer battered Whiting (fzn fish), oven fries, corn, coleslaw

* one of these meals may get pushed. College boys's birthday is the 22nd, he has a choice: meal out, take out of his choice, favorite meal here. He'll get back to me as the date draws nearer. This possible additional expenditure is planned for.

23-beef metballs in brown gravy (fzn), mashed potatoes, peas (fzn)

25-baked vegetarian Penne pasta in homemade marinara covered with cheese, salad, mixed vegetables (fzn)

30-baked mac and cheese with ham cubes, salad

At this point, other than the usual staples: coffee, 1/2 & 1/2, milk, butter, margarine, salad ingredients, seasonal fruit, cheap produce such as carrots/onions/cabbage/potatoes, eggs, OJ, bread flour, sugar-there is little I will need for April. I continue to strive to keep groceries down as I anticipate tapping into reserves to cover future oil bills.
