Vegetarian Thursday

                                   
Vegetarian Thursday=a veggie drawer  clean out and a low cost meal. Ingredients: a bag of $1 store stir fry fzn blended veggies, cabbage, leftover Mexicorn, planned over aka planned ahead cooked white rice, lite soy sauce, Canola and Sesame oils (not pictured), 3 eggs. 1/2 of a large onion, the rest of a small bag of organic CSA fzn Swiss Chard stems, salt and pepper .


Saute all of the vegetables until tender crisp, then add the leftover rice and any leftover veggies that have to go.


 Season with soy sauce, mix well and heat through. Meanwhile beat the eggs and season with salt and black pepper.
Make a well in the pan and scramble the eggs. Fold the cooked eggs into the dish when they are set.

Done, quick, easy, and very economical.

Fried rice, frittata, quiche, or omelette are frequently on my menu plan as a way to use up "bits and pieces" of leftovers. Eggs are an economical source of protein. I usually plan for one "egg based" meal each week.
