Sugar cookies on a budget

Several years ago, regularly purchasing prebaked cookies became cost prohibative, with the exception of an occassional pkg purchased on sale, with a coupon, or if they are from Aldi's (in particular the "fig newtons" and "oreos"). I instead, turn to my collection of cookbooks and my kitchen, preparing treats for the kids, for a fraction of what the stores charge. Even the Valentine's Day cookies at Aldi's were expensive, IMO.

Last night, I mixed a double batch of this oldie but goodie, cookie recipe:

recipe: basic sugar cutouts

Better Homes and Gardens Homemade cookies cookbook, 1989

Basic sugar cutouts

1/3 cup shortening
1/3 cup butter/margarine (I am using stick margarine)
2 cups AP flour
3/4 cup sugar
1 egg
1 Tbsp milk
1 tsp baking powder
1 tsp vanilla

Cream shortening with butter. Add 1/2 of the flour, and the rest of the ingredients. Beat until well combined. Add the remaining flour. Cover and chill 1-2 hours. Divide dough in 1/2. Roll out one 1/2 at a time to 1/8 inch thickness, on a lightly floured surface. Cut into desired shapes. Bake on ungreased cookie sheet @ 375 degrees for 7-9 minutes, until bottoms are lightly browned. Cool on wire rack. Makes 36-48 cookies.

Today's version will be circle and heart shaped cut outs, decorated for Valentine's Day.
