Saturday supper: tacos
Unexpectedly have the boys here for the weekend, due to the blizzard, so I had to come up with something for dinner, instead of the usual leftovers for one. I foraged in the fridge and have some lettuce that needs to be used up, some cooked chicken. So tonight's menu will be chicken breast-black bean (a crash n burn offering) tacos with choice of refried beans (also C & B), homemade (now thawing) taco sauce, chopped tomato, shredded Monteray Jack cheese, chopped Romaine lettuce. Side of C & B Mexicorn.
Planned overs for tomorrow's lunch: chicken-black bean-corn enchilladas for lunch.
Now covered with the same foil used at lunch (cleaned first of course!), it is refrigerated until tomorrow. Just will need to take it out and pop it into the tabletop convection oven. Easy. A few extra minutes tonight, after supper makes it so.
