Fish on Monday: smoked salmon quiche

 A pouch of smoked salmon fillet that needed to be used up,
along with some excellent, aged Cheddar on marked down from Aldi's are my inspiration for tonight's supper:

Just pulled it out of the oven, smells wonderful!

Sides will be canned green beans, tossed salad.

Only 2 pieces left: one is in a lunch container for me to tote to work tomorrow, another is up for grabs. It did come out really, really good. Boys each had seconds, even Mr Picky. : )
