These look fun, and would be a good way to use bits of this n that up. I'd make some all bean or multi bean, some beef some poultry. Wonder how they'd freeze ahead:

Ooh...I can't wait to make these! Great idea for slightly stale tortillas.

make your own tortillas chips, tortilla strips in Mexican soup, a Mexican type layered bean-meat-cheese lasagna style casserole, etc
