This small piece of beef became my inspiration last night for today's supper: beef stew. College boy is at Dad's, younger 2 would be also there for the weekend , so just college girl and I for supper. Plans changed slightly, younger 2 would be eating here after all. I took out what needed to be used up: the beef, leftover peas and pearl onions in sauce, leftover green beans. I also grabbed 2 sprigs celery, 3 older carrots, a can of tomato soup, a can of whole potatoes (crash n burn). Not pictured: low salt beef bouillon, black pepper, organic CSA basil, a large Bay leaf.
I added all of the above, along with a can's worth of water, covered it, and let it cook. I also had added 2 additional carrots and a C & B can of diced potatoes to further stretch the stew.
Once cooked, I made a cornstarch slurry to thicken the sauce. Delicious, cost me hardly anything to make and perfect on a damp, rainy night.

We had ham and potato soup and it was perfect for the weather. Yours looks delish and you didnt have to throw anything out!
That looks great. I love a meal pulled together that way -- they often have the best flavor.
