Many years ago, I'd buy a block of salt pork to make a pot of beans and the rest would languish in my fridge, often expiring and getting tossed. Fed up with the waste, I decided long ago to immediately cube up the salt pork and freeze it in a baggie, to take as I need from the freezer. No more waste-just another frozen asset for me.

Smart move. My grandparents used to cut it in thin slices and fry a portion of it. Then they'd use that grease to season foods. (The salty pork was a treat when we were kids.)
